With flu season upon us, it’s time to keep our bodies in fighting shape. While getting a flu shot is perhaps the most effective way to avoid the fever, phlegm and general malaise, it’s also a good idea to eat well. That’s where this super fig smoothie comes in. Packed with fibre and vitamins, this vegan smoothie is equal parts nutritious and delicious.
Here’s what you’ll need:
Makes 2 servings
- 4 figs
- 4 Tb pomegranate arils
- 1 banana, frozen
- 1/3 c rolled oats
- ½ c coconut milk, chilled
- 1 Tb agave syrup, or other sweetener of choice
- Puffed quinoa
- Coconut whipped cream (see this post for recipe)
- Pumpkin seeds
- Dried cranberries
- Dried goji berries
- Pomegranate arils
- Figs, sliced
Let’s get started!
Blend all the smoothie ingredients together until creamy. You can add a bit of water to aid blending, but it should be fairly thick in order to maintain its integrity when layered. This means that it won’t seep all the way down to the bottom of the glass when you’re assembling everything, and it will help hold the figs in place.
Now the fun part – layering. Place some blueberries at the bottom of 2 glasses. Smash them a bit with a spoon to release some of the juices.
Next, place down a thin layer of granola and then the smoothie mixture. When spooning in the smoothie, pour in a thin layer first, then rest a few sliced figs on this layer and against the glass. Spoon in more of the smoothie – just enough to cover the figs, and finish it all of with a layer of puffed quinoa and coconut whipped cream. Finally garnish this masterpiece with whatever toppings you like and tuck into this healthy snack!
