Fall Cider Floats
  1. Scoop the ice cream into two large glasses.
  2. Divide the caramel sauce among the two glasses, and then top off each glass with 1 cup of cider and 1/2 cup of ginger ale.
  3. Garnish the drinks with whipped cream, a few drizzles of the cider caramel sauce, a few apple slices and a sprinkle of ground cinnamon.
Cider Caramel Sauce
  1. Pour 2 Tbsp of the cider into a small bowl and stir in the cornstarch until completely dissolved. Set this aside.
  2. In a small sauce pan, whisk together the cider, sugar and ground cinnamon and bring this to a boil. Then reduce the heat to medium and continue to simmer this mixture for 5 minutes.
  3. Stir in the cornstarch mixture in the sauce pan and simmer for another minute.
  4. Remove the sauce pan from heat and let it cool. Then pour the caramel into a container and chill it in the fridge.
Recipe Notes

The caramel sauce recipe makes 1 cup of sauce, so feel free to use it as a topping for pancakes or oatmeal, or just as a delicious dip for those apple slices!
