Instructions
  1. Set the milk in a medium saucepan over medium high heat, and bring to a simmer.
  2. Whisk in the cocoa powder, sugar and salt, and continue to simmer for 1 minute.
  3. Reduce the heat to low, and whisk in the chocolate and cookie butter until fully incorporated. Remove from heat and set aside.
  4. This step is for rimming your glasses with speculaas, which is entirely optional. Process the speculaas cookies in a food processor until it resembles a sand like texture. Spread a layer of cookie butter around the rim of each glass, and roll the rim in the cookie crumbs.
  5. Pour hot chocolate into glasses and top with marshmallows. Serve immediately.
Recipe Notes

*You can use Dutch processed or natural cocoa powder. The quality of the cocoa powder is very apparent in this recipe. Using a better quality cocoa powder and chocolate will result in a better tasting hot chocolate.
