So what do you do when you have fresh summer peaches, brie cheese and challah bread? Well, we made an EPIC grilled cheese that will possibly change your life. Check out the recipe below (and wipe your drool while you’re at it)
Makes 2 sandwiches
1 large peach, sliced (or two small peaches)
2 tsp unsalted butter
2 tsp brown sugar
4 slices challah or brioche bread
2 Tb butter, softened (for spreading)
5 oz brie cheese , sliced
In a large frying pan, melt the 2 tsp butter over medium heat. Once melted, add the sliced peaches and cook for 2 minutes, gently flipping the peaches once.
Sprinkle the brown sugar over the peaches and continue to cook for another 3 minutes, flipping the peaches once more. Remove from heat and pour into a small bowl.
Butter the outside of the bread slices with the softened butter. Set a frying pan over medium heat.
Divide the brie cheese among two slices of bread, and using a fork or slotted spoon, place the peach slices on top, finishing with the other slice of bread.
Place each sandwich on the grill and cook until the bread is golden and cheese is melted, about 1-2 minutes each side. Serve immediately.
