We 100% can’t live without dessert (who else agrees?), but we can try and make it a little healthier sometimes. Take a break from the usual desserts and try this Chocolate Cookie Dough Smoothie Bowl. It makes for a great snack, meal, dessert, pretty much any time of day. And you won’t even realize how healthy it is!

 

RECIPE

Vegan, dairy free, gluten free

Makes 1 smoothie bowl

Chocolate chip cookie dough balls:

Makes 7 balls

½ c rolled oats*
2 Tb maple syrup
1 Tb nut butter
½ tsp vanilla extract
1 Tb  mini chocolate chips* (*you can use a vegan chocolate chips, or carob chips)

Blend the oats and coconut in a food processor until it becomes a course meal.

Add in rest of the ingredients except for the chocolate chips in a food processor until smooth. Stir in chips and form into 7 balls.

Refrigerate until ready to use.

*Note: if making gluten free, ensure oats are labelled as “gluten free oats”

Smoothie base:

Makes approx. 2 cups

1 ½  banana, frozen

½ c vanilla almond milk (or other dairy-free alternative)

2 Tb rolled oats

2 Tb maple syrup

1 tsp vanilla extract

2 cookie dough balls (see recipe above)

1 c ice cubes

Blend all ingredients together in a blender until smooth.

Top with the remaining 5 cookie dough balls and whatever else you like!
