Showing your dad how much you appreciate him doesn’t have to cost that much. After all, the best way to show someone how much you love them is food, right? This father’s day, Chef Amy developed this Bacon Banana Bread Pudding (with a bourbon twist) so your dad can have his cake (well, pudding) and eat it too. Check it out!




Makes 1 loaf pan

6 strips (approx. 225g) maple bacon
1 small loaf challah or egg bread, cubed (approx. 300g / 7 cups)
2 eggs|
1 ¼ c 2% milk (or dairy-free alternative)
½ c brown sugar
1 ripe banana, roughly mashed
2 Tbsp bourbon (optional)

Caramel sauce, for topping (optional)
Ice cream, for topping (optional)


Preheat oven to 350°F

Cook the bacon until crispy, and place on paper towel to drain. Reserve the bacon fat for greasing. Once cool, roughly chop the bacon and set aside.

Whisk together the eggs, milk, brown sugar, banana, half the bacon and bourbon. Add the cubed bread and mix until the bread fully absorbs the liquid.


Grease a loaf pan with the leftover bacon fat, and pour the bread mixture into the pan. Top with the remaining bacon.

Bake for 40-45 min or until the top is brown and edges are slightly crisp. Top with caramel sauce and ice cream, serve immediately.
