New Years Eve is the time for celebrations, reflecting on the past year, and getting excited for the new year ahead (New year, new you, right?) Nothing says celebrations like some party cocktails, and thanks to Chef Amy, we have three different ones to really help you step-up your party game.
PEAR GINGER CHAMPAGNE COCKTAIL
Makes 6 glasses
1 Tb lemon juice
1/3 c honey
2 Tb finely chopped peeled ginger
½ tsp vanilla extract
¾ c water
1 bottle of champagne
Blend pear, lemon juice, honey, and ginger on high speed until pureed, approximately 30-45 sec.
Pour mixture into a small sauce pan and heat over medium high until the mixture begins to boil. Immediately reduce heat to medium-low and simmer for 12-15 minutes to reduce it.
Remove from heat, and strain the mixture through a fine mesh sieve or cheesecloth. Place in refrigerator until ready to use.
When ready to use, simple pour 2 Tb of the pear mixture into a champagne flute, and top with champagne.
HOLIDAY CRANBERRY ROSEMARY SANGRIA
Makes 8-10 servings
1 bottle Pinot grigio
1/3 c Triple Sec
¼ c honey (or sugar)
2 Tb lemon juice
Juice of 1 orange (or ¼ c orange juice)
1 orange, sliced into rounds
½ c blackberries
½ c cranberries, fresh or frozen
3 sprigs rosemary
1 ½ c ginger ale
sprigs of rosemary (to garnish glasses)
In a large pitcher, combine first 9 ingredients and refrigerate overnight.
When ready to serve, stir in ginger ale.
Pour into glasses, top with ice and a sprig of rosemary.
CRANBERRY GINGER MULES
Makes 1 drink
3 Tb cranberry sauce
6 oz (¾ c) ginger beer
2 oz vodka
1 Tb lime juice
fresh cranberries, mint and cinnamon sticks (for garnish) – optional
In a copper mule mug mix cranberry sauce, lime juice and vodka.
Add ginger beer and top with ice, stir to combine.
Garnish with cranberries, mint and cinnamon sticks
