We can’t believe how fast Canada Day is coming. We all know this year isn’t just like any other… it’s Canada 150!! And what better way to celebrate our pride and heritage than with a spin on an original Canadian dessert. Presenting: Nanaimo Bar Dip!

INGREDIENTS

 

Dip

2 Tb custard powder
¼ tsp salt
½ c milk or dairy free alternative

½ c unsalted butter, softened
1 c powdered sugar, sifted

Crumble topping
¼  c unsalted butter, melted
3 Tb sugar
3 Tb cocoa powder, sifted
1 egg
½  c graham cracker crumbs
½  c coconut
¼  c chopped almonds

Graham cracker cookies, for dipping

Crumble
Preheat oven to 350°F, and line a baking sheet with parchment paper

Mix together all ingredients to form a dough, and spread in a thin layer onto the prepared baking sheet.


Bake for 12-14 minutes. Remove from oven and let cool fully.

Once cooled, crumble the mixture into small pieces with your hands or chopping it with a knife.

Custard dip

In a small sauce pan, whisk together milk, custard powder and salt. Cook over medium heat, whisking constantly, until it becomes thick, approximately 1-2 minutes. Remove from heat and pour into a bowl to cool for a couple minutes. Once cool enough to handle, press plastic wrap directly onto the custard and place in the refrigerator for 15 – 20 minutes.

Meanwhile, beat the butter and the icing sugar together with an electric mixer until fluffy.

Add the custard to the butter mixture and beat on high until smooth.

Final Product

Layer the cookie crumb mixture with the custard dip in glass bowls.

Serve alongside graham crack cookies for dipping. Keep refrigerated until ready to serve.
