St. Patrick’s Day is over and we’re sure you’re feeling a little tired and in need of a refresher. Say no more, we’ve got you on the road to recovery with this delicious Lime Avocado Coconut Smoothie. Talk about the perfect detox!

 

RECIPE

Vegan, Gluten Free, Lactose Free

Makes approx. 4 cups, enough for 2 large smoothies

Ingredients

Smoothie

1 large avocado (or 2 small)
1/3  c lime juice
1/3 c honey or agave (use agave to keep vegan)
1 c coconut milk
2 tsp vanilla extract
2 c ice

1 recipe Coconut Whip (see below), for topping

Lime zest, for topping (optional)

Toasted coconut flakes, for topping (optional)

Coconut Whip

1 can coconut milk*, chilled in refrigerator overnight
½ tsp liquid stevia OR 3 Tbsp powdered sugar, sifted
½  tsp vanilla extract

 

Instructions

To make coconut whip:

Chill a mixing bowl in the refrigerator prior to preparing the coconut whip

Flip the chilled can of coconut milk over and open the bottom end. The coconut water should have settled and can be poured into a separate glass (for a refreshing drink later!), and scoop out the solidified coconut cream into the chilled mixing bowl.

Add stevia (or powdered sugar) and vanilla and beat on high speed for 5 minutes, until light and fluffy.

Use immediately or refrigerate in an airtight container for up to 2 weeks. Mixture can be re-whipped as needed.

 

Smoothie:

Blend the first 6 ingredients in a blender in high until smooth. Pour into glasses and top with a dollop of coconut whipped cream and garnish with lime zest and toasted coconut.

 

 

*use coconut milk that does not have any guar gum in the ingredient list. This tends to interfere with the separation of the cream from the liquid.
